Dorito Chicken Casserole Recipe

I made this for my husband the other night and he loved it!! The great thing is most of the ingredients you should already have…

2 cups shredded cooked chicken
2 cups shredded Mexican cheese blend (divided)
1 (10 oz) can cream of chicken soup
½ cup milk
½ cup sour cream
1 can Ro-tel tomatoes (drained)
½ packet taco seasoning
1 large bag Doritos
Shredded lettuce (optional)
diced tomato (optional)

Step 1: Pre-heat the oven to 350 degrees. In a large bowl mix together shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-tel tomatoes, and taco seasoning. Mix well.
Step 2: Grease a 2-quart casserole dish, and add a layer of crushed Doritos across the bottom. Top with a layer of the chicken mixture. Add another layer of crushed Doritos, and then add another layer of the chicken mixture. Top with remaining cheese. You can add more crushed Doritos on top as well if you wish.
Step 3: Cover and place into the oven and bake at 350 degrees for 30-25 minutes until bubbling hot. Remove from the oven and top with lettuce and tomato if you choose.

Make your own Instant Oatmeal and Save $$$

But why pay $2.50 (Walmart) for 10 packets of that name brand guy cost you $2.50 at Wal-Mart. (That’s only 2 1/2 cups of oatmeal!) You can make 60 bags (or 15 cups) for only $3.50 – $4.00 depending on how much your Oatmeal cost you.

Here’s what you need:

  • Take a big thing of oatmeal (make sure to use the quick oats, you can get the 42 oz. for around $3.50 – $4.00 at Wal-Mart
  • a box of snack-sized Ziplock bags
  • a 1/4 cup or 1/2 cup measuring cup depending on what size you want to make your packets.

And here’s how you put it together, feel free to add in what you and your family like:

  1. Put ¼ Cup or 1/2 cup oats in the baggie (There’s a 1/4 cup in the name brand pre-made packets)
  2. Approximately 2 TBSP of brown sugar in the baggie
  3. Zip it up!

To Make your Instant Oatmeal

  1. For the water or milk part you add 3/4 cup – 1 cup of water or milk (for the 1/2 c oatmeal size), however you prefer.
  2. You can also add in raisins, dried fruits, cinnamon, chocolate chips, whatever else you like in your oatmeal.


For around $3.50 – $4.00 you now have 60 – 1/4 cup packets or 30 – 1/2 cup packets. The name brand guy for the same amount would cost you between $15.00 & $30.00 depending how much you would eat, 1 packet or 2 packets
